A steaming bowl of chicken soup with diced vegetables, seasoned cubes of chicken, and filled with noodles sounds heavenly, doesn’t it?? Well, our keto chicken noodle recipe does taste amazing even without noodles! This keto chicken soup is tasty, healthy, and easy to prepare, making it a perfect meal.
But chicken soup is already healthy and tastes great! We agree, but we believe that we should substitute a high carb ingredient for the low carb to help everyone remain consistent on their keto journey.
What is keto chicken soup?
A traditional chicken soup usually contains noodles and vegetables. And, of course, we all love traditional homemade chicken soup! However, keto chicken soup is just as tasty with low-carb noodles and low-carb vegetables.
In many cases, keto chicken soup may skip low-carb noodles and instead include vegetables prepared in a spaghetti style to maintain the traditional chicken soup style.
What can you substitute for noodles?
Chicken soup without noodles seems so wrong! Julienne vegetables are an excellent substitute, but we always added julienne vegetables to our chicken soup with our traditional noodles for many of us. So what else can be substituted for noodles? Cauliflower rice has become quite popular and is a wonderful substitution for noodles.
However, our preferred choice of low-carb noodles is zucchini noodles. Of course, they are vegetables, but the noodle style carries a stark resemblance to regular noodles. When cooked, zucchini noodles have a similar al dente texture to regular pasta, which is why it is our favorite noodle substitute! With the use of a spiralizer, You can cut your zucchini into spaghetti-like strips using a spiralizer. Following this, add it to boiling water and cook for approximately 5 minutes.
Gather and wash the ingredients
The first thing we suggest that you do when making keto chicken soup is to clean and wash your chicken and all other ingredients such as fresh seasoning and vegetables. You could wash and clean the vegetables and fresh seasoning first, followed by the chicken.
Season and prepare chicken and vegetables
After the chicken has been washed, diced into medium-sized cubes and seasoned with the blended season, allow to marinate for 2-3 hours. However, if you do not have blended seasoning (marination) or do not have the time to prepare it, powdered seasoning can be used to season your chicken.
Once the chicken is seasoned, set it aside in the refrigerator while preparing your seasonings and vegetables. It is important to note that you should not discard the bone sections of the chicken as you can use them to add flavor to the soup. You can separate these parts of the chicken from the section you have diced and season them as well.
Now you’re ready to cook!
Now that you have prepared all your ingredients, you can place a pot of water at a quarter level on medium heat until the water becomes hot. Place the bony sections of the chicken in the pot to add flavor. These chicken bones do not need to be cooked for more than ten minutes since all you are doing is extracting additional flavor to enhance the soup.
After ten minutes, remove the chicken bones from the liquid and add the cubed chicken. You will not need to cook the cubed chicken for more than 3-5 minutes before adding all your vegetables and any additional seasoning. Ensure that you allow the vegetables to cook for no more than two to three minutes or less. You want to avoid overcooking the vegetables since the zucchini noodles will need to be added and cooked for approximately 3 minutes.
The last thing you should add are the zucchini noodles because you want to ensure that once the chicken soup is ready to be served, the noodles remain firm. Once you add the noodles, cook them for approximately three minutes, now your keto chicken soup is ready to be served!
Chicken bones– Chicken bones are an excellent way to add flavor to your keto chicken soup. Chicken bones can be boiled, pressured, or roasted to extract the flavor.
Chicken– Chicken breast is the best option when cooking keto chicken soup. They are easier to cook and require little prep time. The raw chicken breast will also add flavor to the soup, unlike precooked chicken.
Fresh herbs and seasonings: These items are excellent in enhancing and adding flavor to any meal. It is important that the selection of seasonings and herbs used are balanced to avoid one item overpowering the others.
Low carb vegetables: Vegetables such as squash, celery, and zucchini are low in carbs. Carrots are not low in carbs. However, compared to other root vegetables, they are not high in carbs either.
How to store keto chicken soup
When storing leftover chicken soup, it is best to cool it in an ice bath or pour it into smaller containers to cool faster. It would be best if you did not store hot soup in the refrigerator or freezer since it can cause a rise in temperature inside the fridge or freezer.
Once the soup is cool, you can pour them into sealable bags or plastic containers. However, the noodles in the soup may get soft, so it is best to store the remainder of the soup without the noodles.
When pouring the soup into sealable bags, place the bags in a container or box for support with the ends of the bag folded over the side of the box. Leave one or two inches of space after pouring soup into the bags. Afterward, place the soup still inside the container in the refrigerator for approximately two hours or until it begins to set, then remove the box, seal the bag, and lay flat inside the freezer.
Keto Chicken Soup - The Healthiest low carb soup!
- 16 oz raw chicken
- 16 oz raw bony section sof chicken
- 2 tbsp butter
- 4 ounces cubed celery root
- 1 small onion diced
- 4 ounces diced carrots
- 8 ounces diced squash
- 1 large garlic clove diced
- 1 stalk chopped scallion
- 1 sprig of thyme
- ¼ tsp scotch bonnet pepper
- 3 medium sized zucchini
- 1 whole bay leaf
- 2 tsp chicken base
- salt and pepper to taste
- Wash the chicken and separate the bony sections from the rest of the chicken.
- Set bony sections aside.
- Dice the remainder of the chicken in medium sized cubes.
- Wash, peel and cut the vegetables, seasonings and herbs.
- Place a half pot of water on medium heat. When hot, add the chicken bones. Allow to cook for 5-10 minutes and then remove from liquid. Add the cubed chicken bay leaf, scallion thyme garlic onions and scotch bonnet pepper.
- Cook for 5 minutes.
- Adjust heat to medium low and add vegetables. Allow to cook for approximately three minutes.
- Add zucchini noodles and allow to cook for additional 3-5 minutes or until al dente.
- Add chicken base and adjust heat to low. Allow to simmer until all vegetables and noodles are cooked to your preference.
- Add salt and pepper to taste.
